Banana cake with sweet stevia


Serve a sweet and juicy banana cake flavored with coconut and cardamom, that is baked without sugar and butter! Can easily be made completely lactose free with excellent results.


approx. 10-12 pcs

200 ml flour with whole wheat 200 ml ripe banana, mashed  
150 ml Superfruit coconut flour 50 ml of almond butter  
2.5 tsp baking powder  1 egg, large  
0.5 tsp cardamom 250 ml skim milk  
1 pinch salt 0.5 tsp vanilla flavoring  
0,5 tsp Superfruit sweet 50 ml coconut flakes for decoration  

Preheat the oven to 175°C and line a 2 liter loaf pan with baking paper. Mix all dry ingredients (except coconut) in a mixing bowl, then whisk together the wet ingredients in a separate bowl. While stirring, whisk the flour mixture into the bowl with the wet ingredients, making sure it is well mixed. Pour batter into the bread pan and spread it evenly, then top it off with coconut flakes. Bake in the center of oven for 40-45 minutes and allow to cool in the tin. Cut and serve!
