Chia muffins with coconut


Hearty muffins with lovely taste of coconut, packed with dietary fibers and protein for a long lasting sense of satiety. Perfekt as snack between meals. Lactose- and gluten free.

Dry ingredients
Wet ingredients  
0,8 cup Superfruit Coconut flour 6 eggs  
0,5 cup buckwheat flour 0,8 cup coconut cream  
0,5 cup Superfruit Almond flour 4 tbsp Superfruit Chia seeds  
0,5 cup shredded coconut 2 tbsp Superfruit Chia protein  
3,5 tbsp Superfruit Coconut sugar 0,5 Superfruit Agave syrup  
1 tsp baking powder 3,5 tbsp Superfruit coconut oil, melted  
0,5 tsp salt 0,5 tsp real vanilla powder  
  0,5 cup walnuts  

Preheat the oven to 175 degrees celcius. For best results, use paper molds in a muffin pan. Mix all the dry ingredients in a bowl and set aside. Beat the eggs in a bowl, then add the rest of the wet ingredients and whisk until smooth. Then add chia seeds, chiaprotein and walnuts, set the bowl aside for a moment to let the chia set slightly. Mix in the dry ingredients into the egg mixture, it becomes quite a firm batter or dough. Fill muffin molds, they do not rise that much in the oven, so fill them to the brim! Bake in the oven for 15 minutes. Then cover the muffins with baking paper and bake for another 20 minutes.
