Christmas bread with chia


This is a spicy and juicy bread containing chia seeds and goji berries,
perfect for Christmas dinner!


2 pcs of bread

75 g butter 2 tsp salt  
500 ml plain yogurt 2 tsp ground fennel  
50 g yeast 2 tsp ground anise  
200 ml dark syrup 2 tsp minced orange peel  
50 ml Superfruit goji berries 600 ml rye flour  
50 ml Superfruit chia seeds 900 ml spelt flour  

Melt the butter in a saucepan, then add yogurt and heat the liquid to 37°C. Break up the yeast in a bowl and pour in the liquid, stirring until the yeast dissolves. Mix in syrup, salt, spices, flour, rye flour and spelt flour. Knead the dough well and let rise for 40 minutes, then take the dough and divide it into two pieces on a lightly floured surface. Shape the portions into two loaves and place in greased baking pans, let rise again for 30 minutes. Bake the bread at the bottom of the oven at 175°C for 40 min. Allow the loaves to cool slightly in the pan and then turn them out onto a rack.
