Chiamuffin with coconut


Rich muffin flavoured of coconut, full of fibres and protein for a long lasting satiation. Perfect as a snack! Lactose- and glutenfree.

Dry ingredients Wet ingredients  
200 ml Superfruit Coconut Flour 6 eggs  
150 ml buckwheat flour 200 ml coconut cream  
100 ml Superfruit Almond Flour 4 tbsp Superfruit Chia Seeds  
100 ml coconut, flaked 2 tbsp Superfruit Chia Seeds, grinded  
50 ml Superfruit Coconut sugar 100 ml Superfruit Agave syrup  
1 tsp baking powder 50 ml Superfruit coconut oil, melted  
0,5 tsp salt 0,5 tsp pure vanilla powder  
  100 ml walnuts  

Heat the oven to 175 degrees Celsius. You'll get the best result by using a muffin-tray with paper cups. Mix all the dry ingredients in a bowl and put a side. Whisk the eggs in a bowl and add the rest of the wet ingredients and mix until it's a smooth mixture. Add chia seeds, chia protein and walnuts, put the bowl a side and let the chia seeds swell. Add the dry ingredients to the egg-mixture and mix until the mixture is firm or has turned into a dough. Fill the paper cups all the way up. Bake for 15 minutes, then cover with baking paper and bake for 20 more minutes.
