Raspberry & Coconut pudding

A LUXURIOUS AND REFRESHING COMBINATION OF CHIA PUDDING AND SMOOTHIE. THE SECRET LIES IN MAKING A THICK ENOUGH SMOOTHIE WITH THE CONSISTENCY OF A SORBET TO PUT ON THE CHIA PUDDING. 

Ingredients

1 portion

Raspberry smoothie:  Chia pudding:  
50 g frozen raspberries  1 tbsp Superfruit Chia Seeds  
25 g frozen mango pieces 100 ml coconut milk  
25 g frozen banana pieces    
0.5 tsp Superfruit Agave Syrup     
 50 ml water    

Mix the chia seeds and coconut milk in a glass. Allow the mixture to rest for at least 2 hours so that the seeds swells into a pudding, stirring occasionally. You should make the thick smoothie or sorbet just before serving by mixing the raspberries, mango, banana, water and possibly a little agave syrup in a powerful blender. Place a scoop of the smoothie on top of the chia pudding and enjoy!
