Red cabbage salad with cranberries


Spice up the traditional red cabbage salad with cranberries and walnuts! Suitable alongside most dishes, and is a super healthy alternative.


approx. 4-6 servings

750 g red cabbage 2 tbsp red wine vinegar  
200 ml cranberry juice concentrate 2 tsp salt  
100 ml Superfruit cranberries 2 tsp black pepper  
100 ml walnuts 0,5 garlic clove  
2 tbsp butter    

Chop the nuts coarsely and toast with a bit of salt in a dry pan. Fry the cabbage in butter for about 5 min. Then add cranberry juice and boil until most of the liquid has been absorbed by the cabbage. Then add vinegar, salt, pepper and crushed garlic. Sprinkle walnuts and cranberries over the salad before serving. The salad is best served warm or lukewarm. Garnish with fresh basil.
