Cheesecake with acai jelly and goji berry crust


Serve a surprise for dessert, a creamy cheesecake with acai and goji berries.


approx. 8-10 servings
Filling  Bottom  Acai jelly
800 g cream cheese
200 ml granulated sugar
200 g digestive biscuits
100 g butter
5 sheets of gelatin
300 ml water
1 tbsp vanilla extract 100 ml Superfruit goji berries 50 ml Superfruit acai powder
2 tbsp plain flour    
0.5 tsp salt    
1 tbsp lemon juice    
4 eggs     

Mix the ingredients for the crust in a food processor and spread out into an oven-proof pan with a removable rim. Place the dish in the fridge. Mix the filling in a bowl, adding the eggs last, one at a time and mix evenly. Fill up the form with the filling on top of the crust and bake in oven 40-50 minutes at 175°C. Remove from oven and let cool, then store in the fridge. Soak the gelatin sheets in cold water for five minutes. Mix gelatin, water, acai powder and lime juice in a saucepan and heat until the gelatin has melted, then stir and let the mixture cool until it begins to become a jelly but is still liquid. Pour mixture on top of cheesecake and put it in the fridge for at least 30 minutes.
