Coconut pancakes


A much healthier alternative to regular pancakes that are also gluten- and lactose-free. Rich in dietary fiber, protein and healthy fats!


approx. 8 pcs

2 eggs 0,5  tbsp Superfruit Agave syrup  
100 ml coconut milk 1 tsp baking powder  
100 ml Superfruit Coconut flour 1 tsp cinnamon  
0.5-1 ripe banana a pinch of salt  
1 tsp vanilla coconut oil or butter for frying  

Beat the eggs in a bowl. Mash the banana and mix with the beaten eggs. Mix the dry ingredients in a separate bowl. Whisk the dry ingredients into the egg mixture, then add the coconut milk. Let the batter rest for 5 minutes. Heat the frying pan or pancake iron and cook pancakes in coconut oil or butter. Serve with, for example, fresh berries, whipped cream and jam.
